Follow up to Resurrecting a Macbook Air, and the end of Intel support from Apple

I'm inspired by articles about building up a computer for offline usage, because the internet is extremely distracting! Others are doing this for their children in early education, but I need one for me!
Goals
- No Internet Access necessary.
- No casual browsing or interaction, other than reviewing local notes.
- Network changes, such as syncing directories, can be scripted to enable temporarily.
- Ansible is the most likely option.
- kubuntu LTS or NixOS as base.
Disabling Wifi
